Thanks Darren! Also, just for reference, the B&W Gradiant conversion method is use is the same as this one:

It can be applied to any color photograph, and is generally the last step I do (although sometimes after conversion you can do a final levels to increase the contrast a bit more).
To me, B&W really shines with lots of contrast between the white and dark areas of the image. Not all images work well in B&W, but IR really seems to work well.
