I have written an application for the iPhone OS 4.0 that allows a user to log their GPS coordinates (using multitasking or by leaving the app open [on older iPhone 3G]) and export them to e-mail with a CSV and GPX format.
This utility is really useful to tag photographs as you are on the go or plot your courses with utilities such as Google Earth.
Currently version 1.0 is in the App Store; however, Version 1.1 is coming to the App Store with e-mail attachment support, more battery saving features, and ability to quickly start and stop the GPS module.
