If you post in the Bar and Grill it does not affect the post count. I am not sure if you have been posting in there, I thought I saw you in the Balloon Boy thread, so that could be a reason

I've wondered why my post count doesnt increase that often for quite a while. My post count should be reading well in excess of 1000, but it's taking forever to get out of the 800-900 range

I also wonder if your post count also drops if you participate in a deleted thread or what not. So that may also contribute to it.
