The University of Arizona Atmospheric Science program posts cloud time lapses on their website. Most of them are monsoonal cloud formations that demonstrate some deep convection. It's neat to watch the clouds start fairly low and continue to build throughout the day. Definitely worth checking out.

As a side note, they do take about a minute or so to load, but well worth it.
 
Here is a quicky I did the a couple weeks ago... its got clouds, so I hope it counts... :D

That bright spot at around the 9 oclock position is a moon dog
 
Some very nice videos in this thread to be sure.

Here's my best one to date. Shot this a few nights ago looking south not too far from where I live, at a developing severe thunderstorm. This storm dropped near 2" hail and 60+mph winds about 30 miles south of where I shot this.
